Winter Vegetable Soup

Lovely warming vegetable soup
Course Soup

Ingredients
  

  • 2 Parsnips
  • 2 Carrots
  • 1 Swede
  • 1 Veg Stock Pot
  • 1 clove Garlic
  • 1/2 onion
  • 1 tsp Butter
  • 500 ml Water

Instructions
 

  • Chop all the veg into small pieces
  • Sweat all vegetables in butter for 5/10 mins to enhance flavour
  • Add the water and veg stock, stir and simmer for 20 mins
  • Blend, season and enjoy.
  • Serve with a slice of crusty bread
